An incredible afternoon! Had the opportunity to spend a day with Nobu San in London where he taught me how to make a few Nobu classics. We started with otoro nigiri and quickly moved to various hand rolls and his signature yellowtail jalapeño. Watching the master at work was wild - his attention to detail, effortless hand movements and precision with the knife was insane. Always appreciated the work that goes into sushi making and omakase but after learning first hand how difficult it is to do it correctly, I was blown away.
